Teriyaki Salmon


This quick and easy teriyaki salmon is perfect for a last minute dinner, or an over night planned meal. I used teriyaki marinade, soy sauce, red pepper flakes, minced garlic and ginger, and some rice vinegar as the marinade. I let the salmon soak for 10-15 minutes. The longer you let it set the more flavor it will absorb; however, I wouldn’t leave it for more than 12 hours. I heated my oven to 450° and tossed my carrots and asparagus in olive oil, salt, and peppers. The easy part about this is that everything will cook together in the oven at the same time. I used a deep baking pan for the vegetables and put the salmon on a rack resting on top. In 12 to 15 minutes everything will be finished cooking. This dinner takes no time at all and hardly makes a mess. Just a few minutes in the marinade will give your salmon deep umami flavors with a subtle heat following behind. The flaky fish will fall apart in your mouth leaving you with flavors of sweat and saltiness.The carrots and asparagus are soft yet crunchy with delicious earthy flavors.
