Rigatoni with Chicken Breast and Burnt Broccoli


This dish was truly delicious. I knew that I wanted chicken and pasta, but I was not sure what exactly I wanted to do with it. I had some broccoli left over, so I decided that I was going to do some burnt broccoli along side my chicken and pasta dish. I tossed the broccoli in some olive oil, salt, pepper, cayenne pepper, and garlic powder before spreading them out on a baking sheet and cooking them at 425° F for 20-25 minutes. While that was going, I put salt, freshly cracked black pepper, garlic powder, and some Italian seasoning on my chicken breast and started heating the pan. I had my water boiling and my marinara sauce on low heat to warm up. I added some basic seasonings and some chopped basil to the sauce just to liven it up a bit and give it a nice freshness. I then put some olive oil in my pan and started cooking the chicken on medium high heat. I then poured my rigatoni into the water. I took my chicken off the heat once it had cooked through, about 12- 15 minutes depending on thickness, and set it aside to rest. I added some of the starchy pasta water to the sauce and turned the heat up to 4. Then, I strained my pasta and added it to the bowl before I cut my chicken breast. You want to let the chicken rest before cutting it so that the juices do not all spill out. I then took my broccoli out of the oven once I decided that the char was what I was looking for. I added the sauce to my pasta, followed by the chicken, and finally placed the burnt broccoli stalks around the circumference. The flavors of this dish are incredible from the sweet and spicy marinara sauce, to the salty and savoriness of the chicken breast, to the crisp, charred stalks of burnt broccoli. If you are not a fan of broccoli or just have never tried burnt broccoli, I highly recommend making this dish. Burnt broccoli has completely different flavors and textures than regular broccoli and will blow you away. This is one of my favorite dishes that I have made recently, so you can expect to see some similarities in my future dishes. I hope you give this dish a try and let me know what you think.
